Sentinel Grove Partners Finalizes Strategic Investment in Chef Jim Noble’s New 10,000 Square-Foot Artisanal Bakery, Boulangerie Copain

Sentinel Grove Partners today announced the successful completion to fund Boulangerie Copain, a state-of-the-art commercial bakery by veteran restaurateur Chef Jim Noble. The 10,000-square-foot artisanal bread production facility, located at 200 W. 24th St. in Charlotte, will drastically expand baking capacity and serve as the dedicated supplier for the growing Noble Food & Pursuits restaurant group.
This strategic investment will enable the bakery to produce ten times its current capacity, utilizing top-tier equipment such as French-made Bongard ovens and sourcing locally milled organic flour to craft naturally fermented loaves from a 30-year-old sourdough starter. The facility will exclusively supply highly sought-after baked goods ranging from Bossy Beulah’s chicken sandwich buns to the signature baguettes at Rooster’s Wood-Fired Kitchen, and French inspired pastries at Copain. Boulangerie Copain is slated to officially open its doors in June of this year.
